i would use type s it has more cement in the mix than type n i do commercial contracting (superintendent) they require type s for block type n for brick soooooo anything with bearing or weight has to have type s because of the cement is more in the mix

I was planning to do a dri lay bed with the fieldstone walk . ? Will that work ? Crusher run with a little sand then lay fieldstone , then mortar the joints ? Or do I have to lay stone in a cement bed?

If you just mortar the joints you will have a world of problems. It will just crack and break up. You need to set your stone on a concrete slab to avoid movement from frost that will ruin your mortar joints

Type S should never be used for flat work.
