Charge by the hour?

Not sure if this is the right forum or not, I am looking for some advice on bed clean ups. For those of you who do a lot of this do you mainly charge an hourly rate for large jobs or by the job itself? I will have my manager and probably 1 other employee do it. it is a huge job that will take many weeks, so it is hard for me to envision how long exactly it would take. I am thinking about an hourly rate. Any thoughts on this? once again, thank you in advance for any ideas and help on this topic. Jeff

Some of the resturants that we work for do some of work and they usually pay regular wages that the employee gets.
