I have noticed that a lot of professionaly landscaped areas have the grass cut out from the mulch about 2 or 3 inches. Is this done by a shovel or a machine?

There are sevral choices.Most use a string trimmer and trim the edge vertically.Others use an edger.They come in hand held or push form.Not many do it by hand in our business....to slow,but it can be done.

We do that with a spade usually, but if we have hundreds of feet of beds to edge, we use a power bed edger.

Spread elbow grease and sweat liberally with a spade. Trim weekly with a string trimmer to keep the edge sharp.

I have an electric edger that I use for my walks, and I notice it does have a button to push that will tilt the head. Is this how its done?

To maintain an already established edge the above post are correct, either an stick edger or string trimmer will work fine. If you have no defined beds (or it's poorly defined) then a bed edger would work much better.
I have a Bed Edger from Brown Mfg., works great and is very fast! Call around and see if anyone in your area has one, you will love the results! Here are a few photos:

I rented that edger Ray. I thought to myself "here I go....easy bed edging". The soil was damp and high clay composition so I still spaded. On a new construction I think it would be great, or a balanced and dryer soil. Don't get me wrong--it turned the impossible to a done deal, but it wasn't the mirracle machine I had hoped. I think I read too much hype about it and since my conditions weren't perfect the results were dissapointing.

I have spent some time with this tool! I hate how tricky it is to make curves, and cut through tuff soil!
