here is a free calculator for square footage and stuff....
http://www.measurearea.com/calcs.html

Here is one for getting the cubic yard for mulch and stuff
http://www.soilbuildingsystems.com/CubicYard.php

OR go to the top of this page and click on the lil yellow tab towards the top that says "free tools"
there is a mulch/soil calculator that is the best in my opinion

I think you're only going to be able to estimate mowing time through experience. Just too many variables...

Grass height?
Grass type?
Is it wet or dry?
Obstacles - how many?
Level terrain, or hilly?
Deck size?
Horsepower?
How much ground speed can you get while still keeping high cut quality?
Blade type?
Mulching or discharging/bagging?

I agree, I have a 1 acre property that takes me 3 hours and I have a 4 hour property that takes just under 3 hours. I have a breakdown somewhere with actual property sizes & times. When I come across it I will post it for you.
