I am getting ready to do about 120' of stacked rock to create a border between the lawn and bed area. It will be approximately 8 inches tall and the lay of the area is practically flat. The rock material is about 1.5" thick and is consitent in terms of flatness. Can I get away with just a dry stack or should I use some form material to bind them together?

Dry stack would be fine
get a good base of 12" wide using stone dust packed or concrete

Dry stack is fine, like craver said dig it out about 4" and be sure to almost bury your first course of stones, larger flat stones on the bottom with a few used throughout to tie the smaller ones together.
