I have a problem with a few spots, they get plenty of sunlight but it seems like the trees were planted too shallow or something. The roots are visible and I was wondering if just throwing seed down would get any results.

Put soil over roots and then you put seed

Hate to say it but depending on the tree species you may be screwed. Some trees are shallow rooted and prevent grass from growing.
In my line of work if I have to choose between grass or trees we go for the chainsaw.

If the roots are very visible ad dirt to smooth out and instead of seeding try using mulch around the base of the tree. Its unlikely that grass will establish very well under a tree and mulch just looks better.

If roots are exposed the tree would probably have been planted too high or there was erosion. Roots from a young tree are almost always exposed by erosion. Mulch over them. That makes one less tree you have to trim around.
