need advice about whats needed to start

I really want to start cutting lawns part time this summer. I already have a Gravely PM44Z, trailer, weedeater, and push mower that I use for my property so I'm covered there. What I don't know is how to actually get started so my first questions are(more to come later):

How much ins. should I carry?

Do I have to start an actual business in NC to do this, can't I just start doing it, keep accurate accounting and claim it as extra income at tax time or is this a bad idea?

Talk to your insurance agent about insurance. Each state is different. Keep your business separate from personal when it comes to taxes. Do you have a business plan? If not start one even if it's a simple plan you can build on it as you go. Good luck!
