Have area of 5 X 50 that needs one layer of 3-4 inch size riprap rock.
How many tons do I need, Please?

Rip Rap is much bigger than 3-4 inches. Its more like the size of a honey dew melon or a cantaloupe melon. One tandum truck load or 10 tons should be enough. What are you using it for? Drainage ditch?

where I am in s. texas, there is "busted" up concrete that the yards are calling "riprap." I am wanting to firm up a little parking area at my house. The yard guy here said 5 tons when given the dimensions. That seemed like a bit much to me for a single layer of what I described.

With the description, I would say 4 tons, so the guy you talked to wasn't far off.
Instead of using recycled concrete, you might want to think about using what we call CA-6. It's a sand/gravel mix that compacts extremely well, especially if you plan on parking on it. After you get a good pack base, then put a couple of inches of bigger gravel to help with drainage.
Your recycled material might leave some "voids" that will show up over time.
