Can you espalier a 12 foot apple tree without shocking it to death? Or do you have to start them only from a sapling?

I think you could but you won't be able to do it all at once. 25-30% foliage removed at a time, you could probably do that much two times a year. If you do one cut back in Nov. you will get a bigger flush of growth in the spring as the stored starches will want to be used up somewhere. I would probably also remove most of the fruit for this season.
I would do the second pruning in early spring after the leaves have flushed out. If you have a bad western exposure you can wrap exposed trunk/branches with burlap to provide a little protection.

I wouldn't do more than 25% since its more mature and if you do some heavy pruning do it in the dormant months.
Schooling is already coming in handy
fruit trees can surive 60%reduction easy,as long as it is estabished.go for it.
