I am going to grease my new Ferris mower here in a bit, and will be using the typical chassis grease I keep in my grease guns. Does experience or knowledge tell you to use some other sort of grease for spindle bearings? Nothing else on the device is critical and I am confident that any sort of chassis grease would be fine, but I wonder about the spindles.

I would use what is recommended by the manufacturer, I used to use high temp. waterproof white lithium in my JD spindles, but now my eXmarks have a sealed bearing config. Check your manual, the mfg. usually reccomends a type and grade of grease.
Use any Lithium Complex based grease and you'll be fine.
