I am thinking about removing all of the emissions crap including the throttle body and intake from my 1990 Ford F-250 351 w. And replacing with a carburetor/intake setup. I know the throttle/choke and thermostat will need to be changed... but what else if anything.

You are better off finding a rebuilt 351 windsor that is already carbureted.
You will need to change alot of stuff. Oh ya its not throttle body fuel injection its mulitport.
To carburate that engine your pretty much stripping it down to pistons and block.

would you still be able to use the stock heads? I mean without changing them? You were right too about the injection...my bad. I apprecieate the help, and my point is to make this truck just engin transmission 4 weel drive and trailer. Less to work on and easier to maintain, plus it is an "aged" truck so all of the sensors and injectors are about toast anyway. I am curious if it is possible, and if anyone knows of any pitfalls of this. Maybe transmission issues? I don't know. thanks in advance and thanks to gravel rat for your reply....And my wife wont let me get a different engine... love and marriage love and marriage... lol

If you wanted to have a carbureted engine you would want one that was orginally carbureted. You can eliminate some of the emission sensors but your pretty limited to what you can do.
The other problem you will have to change the fuel tanks in the truck with a tank that can work with a low pressure fuel pump.
A carburetor only needs 5-6 psi not 40-50 psi so the in tank pumps are no use.
You will be spending a good chunk of change converting this truck.
