About to bid on a clearing job. Area is roughly 100ft squared and covered in vines, a few saplings, two 10" diameter logs (about 50' each), and a few stray concrete blocks. The vines are up to 3" in diameter, and are very dense. The depth of the vines is about 2' on average.

Going site unseen, roughly how many 10 yard dump loads do you think there would be?

I would say no more than two, one might work if you cut everything small and pack it in tight.

Sight un-seen, tough call.

When you cut the vines, use a stump killer to kill the roots.

I was thinking along the same lines as White Gardens...and for the logs turn that into firewood to sell or use

Sounds like a job for a grapple bucket and chipper.
