Should i use contracts for all my customers?
what about a monthly invoice?

Contracts for everything! If nothing else it will get you and your customer on the same page so there (hopefully) won't be disagreements later.

Contracts are the only way to go. They stop paying you have papers saying that they will... Best of luck to you.

Yea I'd say go with contracts I know im gonna push them.
But to go on with what happygrass said would it be better to bill monthly with a contract or collect the day of service? Im thinking I will collect day of service for non contract and bill monthly with contract agreements. Grand opening for my business is Monday !!

I leave that to the customer. Most will be sent a monthly bill. Alot of times customers arent home, or are to busy to answer the door or i am too busy to go to the door. I get home ever day and print out a list of lawns done, and add that to the file, Few last days of the month or the 1st i print out a final bill and send it to them. I give them 15 days to pay or service is stopped. Once they have to call to turn service on again they start to pay faster. Works for me... Hope it works for all, best of luck on Monday
