Depending on which directiion your tirmmer head rotates... find a place away from the beds and only move the trimmer in one direction for a few feet and then the other.... the direction that throws the clippings all over your legs is the one you need to use on the beds.
Now you know why they end up in the beds! Of course everywhere else you'd move the trimmer the other direction unless you just love being coverd in grass spunk.

What kind of trimmer do you have? Commercial type with a striaght shaft or a curved shaft model?
The question has already been answered though, run the trimmer so it throws the clippings at you. A striaght shaft trimmer will keep the most out of the beds if you actually walk backwards with the trimmer head off to the side in front of you, sort of pulling it along.

I learned to walk backwards with mine years ago. And go back over beds, sidewalks, etc with blower before mowing to throw "the mess" made by trimmer and edger (and any hand-weeding) out onto lawn for mower to deal with. In the end it's all finesse. And a lot prettier than me crying tears of gratitude the first time I saw the WEEDEATER advertised in 1973 . . . using those old hand clippers on over-fertilized St. Augustine was murder on a hot day.
