when the edging goes underneath the edge of the pavers and you do your final compaction over the paver's wouldn't the edging affect the compaction of the pavers at the edge resulting in a slightly U shaped sidewalk?

Rember - the edge restraint sits on the base, not on the sand, so if you use Pave Edge or another lipped restraint you would have base, edge restraint lip, sand, paver. Compaction would not be affected.

You don't put the paver edge under the pavers. You'll crack the pavers when tamping, or they'll definitely be on a angle, and water won't run off.

Some brands have a a retention lip that goes under the paver. PaveEdge for instance. It works well and the pavers don't crack or sit at an angle.

If your bedding layer is at least 1" of C-33 Sand then you have lots of room as the sand usually only compacts 3/8-1/2".
