If everything is on site and you have the correct tools, 1 day with a 3 man crew. And that is including sitting down for lunch...
we buildt 8x11's in 1 day all the time...

I may have over bid it then. I told them $850 + ANY SUPPLIES I MAY NEED.
One more question tho, may be a no brainer, i got to bring in fill dirt for that waterfall tho,right? they want it dropin four feet. right now th grounds level with the pond. Anyway, I hope i get it! I really want a shot at it!

First of, I don't think you want a 4' drop in that area, not in a 5x10 pond... It would not look right... if you do, yes you have to bring in fill. If you do bring in fill make sure you compact it as you put it down, don't make a 4" pile and jump on it twice and think it is not going to settle. compact every 6" or so until you reach your correct height.
I don't know about the labor rates in your area, but;
a 3 man crew, 1 foreman and 2 laborers on a 8 hour day, I will bill out at $1120.- (8 X $140.-) and I think I'm low on my labor charges.
