Have a customer that wants to use the aluminum fencing around their pool, but want me to build them post out of pavers instead of using the post. What approach would you take?

use the pavers to hide the post.

Ya, just set your posts and stack your pavers around it.
Larger wall block would probably be better than pavers, so look in to that instead.

dig a 1 foot footing, or what you town code is, poor in concrete and level. come back the next day and start the columns, it doesn't matter what type of pavers you use you always start at a corners and fill in. don't forget to use concrete reinforcement tabs every 2 or 3 feet. you need to ensure each row of pavers are plumb square and level, their is variation to this but in some situations the columns cannot be completed at one time becouse the concrete needs to cure build 1/2 height 1 day the next you finish. if the columns will support a gate you must make sure your math is dead on. it is easier to put in the columns first then assemble the fence off the columns.

It is very simple to build an SRW column or pillar and attach fencing to it. Build your columns or pillars as you normally would and get the appropriate "L" shaped bracket from the fence supplier and use Tapcons or some other masonry screw and attach the brackets to the pillars and the fence to the brackets. When building your column, realize where the fence brackets will be installed and avoid a seam with your layers of block in those areas.
If the fence is excessively large, heavy or a gate, half posts or full posts can be installed directly next to your columns and be anchored in concrete for support.
