I have not worked on many hardscape projects but would like to start getting in to it. When you lay larger size pavers do you use screening or sand?

What do you mean by "large"? Like 8x12/12x12 or large slabs like 18x18/24x24?

Concrete product or natural stone? How thick are they?

I would use "stone dust" for any slab installation that won't be compacted.
btw, screenings is another word for the setting bed.

For my patio installs I use 5" of 5/8" minus and 1 1/2" of 'decompose granite'. The fine granite compacts way better than the other local 'fines'.

for patios I've used a 3/4" crushed stone, with a leveling bed of either sand or stone dust. If you're talking a uniform patio material, then stone dust would be the way to go, assuming a quality concrete mix. If it were flagstone I generally go with sand as a leveling bed.
