How should I trim some that are growing out of control? I would say they are 8 feet high...is there a certain height they should be?

Well, if they are out of control, then just trim them as needed. As long as you expect water through the season, cutting them to 4 feet is no problem.

To renovation prune them, trim the oldest woody canes to the ground. Forsythia is meant to grow like a fountain out of the ground so pruning them to some intermediate height will not be truly pleasing. In this case it may be necessary to prune what remains to a controllable height. If the oldest canes are removed each year, it won't have to be pruned constantly. If you are really annoyed with them, prune the entire shrub to the ground and start over with new tender growth.
