Just curious how high you can go using penn fieldstone? Most stone is 3" to 10" thick with big stuff tied in deep to the backing like deadmen. Normally I would not do anything larger than 4 ft but this wall is looking like it needs to be 5' high

If you are building a dry stone wall to DSWA specifications with a 2 in 12" batter your base wall thickness for a 5' wall would be 32" wide. Through stones at 18" in height every 3' with a 2-3" overhang on both sides, and throughs a 36" in height staggered on the previous throughs. Of course this does not even address any more formal details such as corners, wall ends, radius, stepped foundation, fence or retaining etc...
You can build as high as needed but really need proper training for anything over 4'. look up the Stone Trust in Vermont and do a workshop with them.
