Good points. I've had good luck with listing optionals. Folks generally take at least some of them.

I like to use the phrase - "questioning the price implies there is an absence of value in what I'm proposing, help me with what you don't see value in". Then we discuss what we can eliminate from a proposal to get to a price point the customer is comfortable with.
Tough to stick to your guns and easier said then done sometimes.
