I've seen pine straw beds that were neat around the edges like someone hand form them to look neatly rounded around the edges. How do they do that?

They basically tuck them under and "roll" the edge just as you described.

I like to blow mine back with the blower. It slightly rolls the edge.

I agree a blower works well, also you could try a little edging. I'm small time so I just take a hoe and turn it on it's corner, scrape/draw my lines then dig in with the corner of the hoe leaned back toward the bed. With regular mulch, it gives your mulch bed a nice crisp but organic (sans bricks and plastic etc) look without spilling into the grass. It doesn't sound like much but it really works. I guess one way to put it is that it lets you create a slight "footer" to keep the mulch in and up in case of raised mulch, as well as creating a smooth line and keeping you from getting that melting into the yard look. Also helps to hold rocks up on slanted ground and not sliding down the weed mats by creating the footer. I think mixing that with the blower would make the needles pop for you
