we have a few jobs lined up which require small decorative walls. nothing big mind u, 3 x10 max. though well built, they can easily be knocked over from kids playing on them etc. this is fieldstone/natural stone. does anyone use cement in between layers?

We only use mortar between them if the wall will be built on concrete footings, otherwise they (the joints) tend to crack and crumble after a few freeze/thaw cycles. If you're able to get a reasonably tight joint with somewhat parallel surfaces try a single stage polyurethane elastomeric caulking, we've had excellent results. The elastic properties are amazing allowing up to 600% stretch. We use it on all our expansion joints in everything from flagstone walks to concrete pads. If you do end up using mortar make sure to suppliment the mix with a bonding liquid and a plasticizer, it allows a bit of movement.
Have fun !
