grass buildup

I was wondering if the exmark is like other mowers in the sense that you can adjust the deck height so the back is 1/2 higher than the front to reduce the grass buildup.

The simple answer is yes.

The more complex answer is that in certain conditions a 1/2" of rake may reduce grass build up but may cause other issues as conditions change. You can experiment a little but often a 1/4" will achieve the same results with less risk of creating other issues.

I raised the deck 1/4 inch in the back and the results are great, I have put about 10 hrs on the mower since then and I have not had to scrape the deck once. Even when mowing in wet conditions the deck stays clean.

That's great. You should probably get a little better stripe out of the lawn as well.
