Pruning Fruit tree's

I was suppose to prune a pear, apple tree about 2 - 3 weeks ago when the tree wasn't harvesting..

I was mowing the customer's house a few days ago, and I noticed that the fruit tree's are harvesting..

I can't prune that much off now because I can't see the WATERSHOOTS!!!

I've never done a fruit tree pruning, but I've read up on what to prune! I can't seem to find the water shoots anymore because they are all harvesting!

Not sure what to do!
