I think after doing the job for her. I would send her a thank you/ apology card with a nice gift certificate.

"again i apologize for my employees actions and am embarrassed by what he did. Thank you for not judging my company by the actions of one former employee. I appreciate your business and please enjoy a nice dinner on me."

something to that effect
because if she wanted to she could tell her friends and neighbours.
