Take the color paver you would like the cover to be and crumble it into sand particles, rough up the cap with sandpaper, wire brush ect to get the "gloss" off, we use 5 minute epoxy but with a bigger cap like in your description i would use 15 or 30 minute...brush the epoxy onto the cap then sprinkle the paver dust onto the epoxy and let it dry. We don't do this with our under mount lights but you could then thin another batch of epoxy and "clearcoat" the cap. It might be better to try on a sample cap first to test the appearance.

For future reference they make lids with a recessed top for stamped concrete and pebble-tec applications
