Submitting commercial bids by email?

I am just now set up for smaller Commercial accounts. I started making a couple of calls today to local places and 3 of them want Bids sent by email. I know that this is not the best way because you lose face time but they were decision makers and were not even in the area so email may be the best way?

My question is, when sending over a packet is there any format or good ways to send it so all the information gets across and not mixed up. I can just put it in a zip folder and put a page number on each page?

I don't want to over do it so they have to open up a hand full of docs but I want to be clear as well.

I've sent Resi bids by email but never to a commercial account.

Any ideas or personal experiences will help a lot.
