I don't see a choice, on the paint. Find a good fab shop and let them have at it. Scag offers OEM spray paint. No, it won't be perfect. But, the rollers will be worth it.

I'd get your material cut, holes drilled, rollers bolted up, deck dropped onto the existing roller, then, tack on the new ones. Remove the rollers and do a final weld. That way all your rollers are even.
