Josh:

We just finished a 1,000 SF project using EP Henry Eco Pavers. The area we put this in is pretty wet, so we put the following:

Geotextile fabric
24+ inches ballast (3-4 clean stone)
Geotextile fabric again
6+ inches 2b clean (3/4" clean stone)
Geotextile fabric again...again
2 inches 1b (3/8 clean stone)

Pavers sit on top of 3/8 stone and same stone fills joints...no poly sand as drainage is the reason to use perm pavers and poly sand would prevent drainage.

I will forward pictures later.

A curb would have been the best edge, but we used a product from EP Henry called perm edge...basically an edge restraint with four feet of a grid material. The grid part of the edge is placed down with the pavers sitting on top of the grid. The weight of the pavers on the grid will help keep the edge from sinking.
