So should I simply install new filter and add oil. Then crank, let run for a few minutes and then do another oil change?

If you drained it real good, there is no reason to change it again. Put the new oil and filter on and go for it.
I hate that you had it happen, but I've been trying to get the word out for a while on why you should shut off the fuel. You never know when its gonna happen. Maybe people will realize that it can happen to anybody and will take the 1 second to bend over and turn the knob. Talk about an easy and cheap preventative measure!
