Just an update on my newest tool...
Cooked an 8 lb boston butt in 11 hours...right thru the all day rains..and thunderstorms..
That smoker sheds water like a duck and held 250 all day long..
Melt in your mouth pulled pork..moist and tender..
It will cook around 100 8lb butts at the same time..
Almost ready for prime time...
I will try to get you guys some non descript pics in the next few weeks..

I did a boston butt a week or 2 ago on the weber. Used some apple chips for smoke and cooked it for 5-6 hrs, turned out great. A friend turned me on to North Carolina sauce (not red sauce!) a few years ago and thats what I usually do now.

Its all good...
I've always used stik burners...lots of oak trees in the south...
Boston Butts are just like beef briskits...they stall about halfway into cooking them..
I make my own smokers..dry rubs and mop sauces....I can't make trees or animals...
Though. ...on a good day I don't have to go to the store for them either...

Here's how I cook butts...
Paint em down with mustard and honey...cover them with my dry rub...
Start smoking fat side down to 140..flip.to fat side up...at 165 I wrap it in foil...leave it in the smoker to 195..
Baste every 2 hours...works for me...man ..I'm hungry again...

I'm gettin closer to thinkin bout negotiating...
Went on a job interview this morning...I still have a job that pays well...working conditions sub par.
Initially over the phone...it sounded like a definite maybe..man was I wrong....they lied to me..
Its one of the bigger mower shops in the city of tampa...been around a long time..
Filled out my app..the service mgr and one mechanic each have 1 arm in a sling..
That gets me to start wondering bout this place...finally get to talk to one of the big cheeses..
Walked into the repair shop..7 mechanics working on home depot stuff...there may have been 5 commercial mowers in the yard..which incedentally is where all the mowers are stored...fixed or not fixed...not under cover...covered with rain water...it hasn't stopped raining in about 5 days..
The interview came to an abrupt end when he told me he couldn't pay me anything close to what we agreed to over the phone..
I won't tell you their name...but with the amount of comm eqpt in their bldg...you guys prolly don't know them anyway..
Sure glad I missed that job...shoulda brought a camera..a pic of the guy with the 12 in 3 jaw puller on a briggs flywheel...
Would have been priceless...

Posted top pay in their ad was $16.50...told them over the phone it was not enough...
I will give you a hint...
find the shop with 2 guys wearings arm slings...and 100 toro pushmowers full of water..
The name of the street starts with R and ends in MENIA...

Was going to be my guess. Stopped there last week needing a 4L480 belt for a Scag in a pinch. Guy says all we got is Toro and their bagged. Yea they service all makes. Bunch of hacks.

It just dawned on me....
The reason why the service mgr and the mechanic have 1 arm in a sling..
These are the guys that have to pull start the mowers when the customers pick them up..
With over 100 toro pushmowers in the rain for days on end...and they still can't figure out why they won't start..
I bet they got their certifications by testing online...

Their gen mgr is a former briggs rep with a somewhat dubious background...
He is a first class snake oiler...
Tell you what...I left that bldg feeling pretty good about myself...
I had forgotten how many bonehead mechanics populate the mower repair shops..
