As with irrigation, it depends on the installer... My security guy has cameras he can hang from a 14ft ceiling and read the serial numbers off money in a cash register. he also has cameras that have heaters in them to keep the snow melted off of em.

Several things come into play with quality. First you have the resolution of the camera. You'd probably have to go to IP cameras to get the higher resolution cameras. the second is the recording resolution. the higher the resolution, the less the recorder can hold, so lots of people dial back the recording resolution. The other is the capabilities of the recorder. Only the really high dollar ones can record the ultra high resolutions at a normal framerate. Infared can be used so the cameras can "see" at night, however the quality drops off severely and I believe most infared cameras only like a 15ft range, so you'd be better off to have plenty of on-site lighting to keep everything well lit.
