Stone Flower beds around trees

I have two customers that want bids for Austin stone/mortar flower beds around their trees. I have very little experience with masonry work. How important is a concrete footer for the base. The soil around here is either clay or rock not much in-between. I was thinking about a 6" x 6" or maybe 6" by 4" footer with rebar. I have also heard of driving rebar in the ground to prevent mortar-cracking/shifting. The slope of the yard is minimal.. Only 1' or 1-1/2' of stone will be visible at the front and no more than 6" at the rear. The bed will be 6’ or 8’ in diameter depending on what the customer wants. Does this sound like overkill?

Suggestions comments greatly appreciated!!
