Transporting to the ground

Just starting to get into the planting part of tree's. We are planting after growing in a pot for about a year. My question is - how is it best to cut the roots? I know you don't want to take it out of the pot and put in it in a hole. 1- Take most of the dirt off, or just cut some of the sides just loosing it up?
