Has anyone used a company called SMS? They are a nationwide consulting business who analyzes your everyday processes and helps to guide your business into a more well trained machine etc... There are other companies who do this type of work as well.

But I do know, and it may be worth checking into for you, that there are numerous "green industry" consultants out there doing consulting work just for landscape contractors. I had the pleasure of sitting in on 2 days of classes/discussions with 2 of the better known ones. The info I walked away from the classes with was invaluable to me as a person and me as a businessowner. My advice to you, is if you are serious about bringing in a consultant then check some of these guys out. Do a google search. Look at who writes columns and articles in Trade magazines, etc.
