Sales tax is a liability account. The customer pays it to you, the trustee, who periodically remits it to the state. Its been a while since I fooled with Quickbooks but the best I recollect you go a sales tax drop down list as part of creating invoices and clicking "set up" when prompted. You fill in the sales tax rate.
