Setting a goal to get out of the field

I'm currently a solo with summer help and this year I hired a guy with hopes he can be full time and take the mowing route a day or so if needed.

Ideally I would like to hire a second guy and get off the mower and into the office/up sell more/expand weed control.

I know my expenses and will have to work on a production goal as the mowing season picks up.

So what would be an acceptable take home profit for you the owner from your mowing crew? I'd like to set a weekly gross goal to help reach.

500/week? .... 500/week summer and 250/week winter(no plowing here)? Curious what everyone would think a satisfactory profit would be to cover the headaches of not being on site.
