4th of July What's cookin?

  1. I'll stick to brisket but I'm going to make some homemade refried beans. Found this recipe. Make sure that fat is smokin hot!

    El Charro Frijoles Refritos
    (Refried Beans)

    They're great served with fajitas, guacamole, and flour tortillas.

    Recipe By : El Charro **** Favorite Recipes

    4 Cups pinto beans -- cooked & mashed
    12 Ounces evaporated milk
    2 Tablespoons shortening -- melted
    1/2 Pound cheddar cheese -- shredded
    Salsa De Chile Colorado

    Mash beans in skillet and add hot oil. Mix well. Stir in evaporated miklk. Cook over very low heat, stirring frequently.

    Before serving, refry beans by adding 2 tablespoons smoking hot fat, shredded cheese to taste and some Salsa and stir briskly over high heat.

    I've got some very nice marbled ribeye steaks today. I'll make sure they are nice and warm before I grill them, maybe close to bad. :)

    The usual dogs, burgers, and sides. Then on to the baseball game with fireworks. Anticipate a great time with the fam.

    Burgers, Hotdogs and short ribs. We bought the reserve grand champion head of beef at last year's Los Angeles County Fair Junior Livestock Auction.... it's been the best damn beef I've ever had! We've been waiting till the 4th to have a BBQ and cook the ribs... Should be tasty!
     
  5. How are you going to cook those ribs? I just read a pretty good recipe I'm going to try sometime. If you buy the rib roast you can cut out the ribs with extra meat and then slice what is left into ribeye steaks. I'm learning a lot about cattle these days. Apparently the grass fed thing is a rip off. Makes for lousy tasting meat as well. The sister getting married to a rancher up here says he picks out a cow and feeds it a certain grain/corn mix and butchers it at age 2 for some awesome meat. The rest go to a feed lot for corn and more corn.

    I've been reading some recipes.... it looks like it will be slow with indirect heat and with some wood chips too......I've seen at least 3 different recipes that say to cook them 3/4 of the way on the BBQ and then bake them in the oven the last 1/4 of the way and THEN brush them with whatever sauce you're using. We'll see how it goes! I can do steaks, burgers, chicken, roasts but ribs are a bit of a mystery to me!

    Short ribs are traditionally braised.
