Have a Echo CS-3000, has run fine for years. Recently it will run at full throttle no problem when not cutting but once you start cutting wood with it it dies out. Any ideas?

I would check for fuel restriction, fuel filter may be dirty, carb might be dirty too. I would put fresh gas and clean the tank and carb and go from there.

You may want to open the idle circuit adjustment a bit before you tear anything down. I just worked on a CS340 yesterday with the same condition and opening the idle screw a tad corrected the problem. My assumption(correct or not) is that as the pump diagphram gets older it becomes less pliable and as a result doesn't pump as much fuel. It may be worth a try even though you may have to remove the adjustment limiters to do so. Beyond that do as Mudder indicated.
