How much should a good manager get paid? Someone to oversee operations and scheduling? What is a good payscale?

How much are you guys who are running weed and feeds, spray apps are you paying your employees? How much training do you give them before you turn them loose?

I couldn't give you hard numbers, I guess it depends on what you expect from them. Will you be there, working alongside them, or are you looking for someone who can run the show in your absence? It can be a Catch-22. A manager is often a non-revenue producing employee, but on the other hand, they give you the freedom to take vacations in-season, come and go as you please, and just in general enable you to enjoy the fruits of your labor. So while they may not "make" you any money, they might be essential for your sanity.
