OK, some of you may get a laugh out of this, but that's ok.

What does the acronym "LCO" stand for? I know it refers to lawn care companies, but what do the letters themselves stand for? Lawn Care Operation? Lawn Care Organization? What?

Not that it matters that much, I just want to know.

You are on the right track. When referring to a person, an lco is a lawn care owner or lawn care operator. When referring to a business, I think of it as lawn care operation.
