What does it consist of and what would be the difference if I just got gator blades? If it matters, i have a Toro Z500 ztr.

Big difference, the mower will still discharge with just gator blades.

The kit has deck baffles to allow the clippings to be recut over and over again.

mulching kits usually consist of baffles installed under the deck, mulching blades (different than gator blades) and a plate that blocks the discharge chute.

mulching kits work better because the installed baffles divide the deck into circular chambers that allow the blades of grass to circulate through the blades multipul times.

without the baffles and mulching blades the mower will want to throw everything out the discharge side like it is designed and if you just use gator blades and the plate the clippings will just hit the plate and fall down creating rows of cut grass.
