So most of the time I've been dealing with just one person when it comes to a patio or landscape install and they signed the contract.

Question...........should I actually get 2 signatures? Husband and wife?

    How do you do it?

I only get one signature, unless they have a two signature check.

You just make sure they agree to the job. If they disagree then you may need to wait until they do before starting. Who knows what kind of problems you may have when you pit them against each other on a job?

    One signature is sufficient.

By law you only need one signature. The trick is making sure that the "true" prperty owner is the signer.
