Best grass for new lawn in western NC?

I plan to re-seed a 3 acre area around a new home that was built last fall. Right now it is about 80% clover, thistle, and other weeds, and 20% fescue. There are no trees, all sunny and too much area for me to irrigate. We have mostly red clay soil and rolling terrain. I am mowing with a Great Dane Chariot 61, and all these weeds clog the deck. What type grass would work best for this area? Any tips for weed control and getting a good stand this fall? Thanks for the help. clg
