What should I do to keep Centipede healthy to start in the Spring?
Not much. Centipede is a low maintenance grass. May need an areation, light fertilizer with low nitrigen, high phosphate in late May, early June, and WATER.
With the soil being predominately claw, would a plug aeration be the better choice?
Do everything recommended above. When you mow it bag the clippings.
DO NOT FERTILIZE NOW... make sure as j fisher said, wait until late may/june.
check the soil and get the pH to about 5.6-6.5
Centipede doesnt like high amounts of Phosphate, but does like a little potassium evey now and then. Low N&P and higher K for centipede.
