I've got a nursery going in down here in FL, and need a new/used piece of mowing equipment. I have a separate full time job, and 10 acres to take care of so I'm looking at a bigger deck. Trees are planted on 10' centers, and herbicide spray leaves me about 5-6 feet of grass between my rows. Can't use side discharge cuz it throws my clippings on my trees.

Sometimes in the summer a bi-weekly cut is ROUGH because the bahia gets tall and thick.

I'm leaning towards a 72" Deere or a Scag, with a rear discharge. Finding a used mower with a rear discharge is tough and a new one is very expensive. Would I be able to get by with a 72" deck and a mulching kit/blades? Other suggestions? Fastest cut possible is my goal, but I don't have unlimited funds.

Or just bag it and dump the clippings in piles when it fills up. Spread it out real quick with your foot so it's not a mound. This should really rettard the grass from growing back so quick also. But might cause fungus from trapped moisture.

what I originally was going to say but thought it would be too dangerous, but that would only be on a walk behind and I don't think you're using a walk behind. What I suggest is alter the chute so the clippings shoot more behind you instead of to the side. i.e bolt/weld plate(s) onto it so the clippings direct behind you. Could cause clogging depending on how much angle you alter it but might work out.
