Suggestions for greenery to plant between open gaps in pavers? What information would be helpful?

If that is the look your going for then I would use something like a creeping thyme to put in between the joints and let it grow.

The problem is managing the weeds and making sure the joints are big enough that something is able to grow effectively in between the pavers.

I haven't laid the pavers as yet and plan on a 2" gap between. Is 2" appropriate?

Wooly thyme, Irish Moss, Scotch Moss, Blue Star Creeper. Those are a few things that come to mind. For planting between pavers or flagstone, I'd rather have a 3-4" joint to work with, though.
