I have done retaining wall for years now, but have only done a few paver patios for some close friends/customers. But I have a new customer that wants about 500 sq ft of patio done and wanted to know what a fair price is w/out cutting myself short or overcharging and scaring the customer away? I have heard anywhere from $7-14 a sq ft? What do you guys think?

Never price by the square foot. All your pricing should be site specific. Can you get a machine in for excavation? Can you stage product near the work area? What type of soil? What type of paver? What is your knowledge level? Do you own or rent? What will your market bear? All of these things (and more!) will determine your pricing. I will tell you that in a perfect world with all of the planets aligned I would probably be at $12 - $17/sq. depending on the paver and pattern. Strictly a guesstimate.
